The Alta Mogiana region, located in the northeastern part of São Paulo state and bordering Minas Gerais in Brazil, is a renowned coffee-producing area with a rich history and ideal conditions for cultivating high-quality beans.
This region benefits from a unique combination of high altitude, fertile volcanic soil, and a favorable climate that allows for exceptional coffee growth. The region's altitude ranges between 900 and 1,200 meters above sea level, which provides the perfect environment for the development of complex flavors and natural sweetness in coffee beans.

The Mogiana crop is known to be an all year round crop, harvested a couple of times during the year. Hence, it is one of the well known espresso focused crops all over the world. Our roasting approach for this crop was mainly to highlight its deep and rich aromatics and sugar sweetness, as well as lowering it's mild acidity to better highlight those nutty characters of it. So we opted to roast it to a dark medium level to reach this bold potential and long lasting aftertaste. Optimizing it to better suit that 9 bar espresso focused extraction for your classical yet nutty twisted flavor profile.
