A sweet aromatic blend of two gems of coffee varieties (SL28 & SL34)!
Sourced by Project Origin, this single origin blend was grown and produced within the Nyeri County, Kenya. Developed and matured slowly, producing extra-hard beans that are full of flavor and character. Thageini washing station created their first Kenyan Carbonic Maceration (CM) Selections coffees back in 2017 and have been working with them ever since. They source washed, natural, peaberry and CM Selections coffees from Thageini and are inspired by the local team's dedication to quality. The Thageini mill is one of four wet mills that make up the Aguthi Farmer's Co-operative Society. It is home to the second largest number of member producers, hosting 350 men and 100 women members out of the 2000 total members that are part of this Society. Once the wet milling and drying is complete at the Thageini mill, the parchment or dried cherry pods are delivered to the Sagana Coffee dry mill for de-hulling, grading and preparation for export.
Kenyan coffees had always been on the high scale of clean and sweet specialty coffee, and this combination of these two varieties is no exception al all. The SL28 is one of the rare varieties of that is defined by the clear sweet aromatics and very clean and smooth cups, that always impresses. By combining it with an SL34 variety of the same origin definitely brings out more to the table. The Carbonic Maceration processing of the crop definitely highlighted the sweet aromatics of the crop, while keeping the natural flavor of it intact, as opposed to heavy types of processing that usually change the origin characters of a crop. This product is a well balanced, sweet cup of coffee, that has a mild enveloping acidity rounding up the taste in the cup profile for sure. A coffee that is not to be missed for anyone who actually enjoys their coffee.
We've went with a filter profile for roasting this crop, highlighting its delicate aromatics instead of balancing them out with a heavier body, as we think it should be enjoyed as a pure filter brew, morning or evening, whichever you decide, it is there to impress.

- Method: 10 Pours total (including bloom - The New Tatsu Kasuya Recipe):
- 30g Bloom.
- @ 0:30 Min: Add 9 Pours of 35g (every 15 seconds) until you reach 340g.
- As soon as bed dries: Serve and Enjoy!
