This Costa Rican crop is produced by Isabel Rojas & Regulo Urena at Cafe Rivense Del Chirripo, which is a family owned farm operating since 2005, situated at the southern regions of Costa Rica. They won the 5th & 20th place of the cup of excellence (COE) back in 2019, becoming the first micro lot producer to be placed amongst the first 10 competitors at the COE competition.
The cupping profile of this coffee reminds us of our (Topical Bomb) product we introduced previously, it has a less pronounced aroma profile due to its natural process, although you can right away distinguish the citric and tropical fruits aroma in the cup, along with a somewhat dominating milk chocolate dry grounds fragrance, coupled with slight caramel lingering as a back note aroma.
We have roasted this crop to a medium level to balance out its moderate acidity in order to envelop the citrus notes with its tropical notes, increasing the balance of the cup and to give out a well rounded and enjoyable espresso as well as a filter brew. Non the less, you'll definitely taste those tropical fruits while the cup is cooling down, increasing its acidity to a more enjoyable citric profile.
